Rossi vs. Gregoire

To make things even sweeter, I got to work at 4am this morning and was greeted by my friend who kept up with the results last night. He told me about the defeat, or as he put it, "failure" of Rossi which made the rest of the day so much brighter. I can't wait to get involved in what's going on in the next four years locally! i personally enjoy throwing a couple of zucchini, thin sliced, into the lasagna.

go for the block mozzarella and parmesan-type cheeses, because then you won't be getting any cellulose in your lasagna, and the cheeses will melt together better. i'm also a fan of mixing cheeses, aged cheddar and colby are quite nice accents to the overall dish.

and while i'm a fan of a meaty lasagna, things like zucchini can really cover well for it.

damnit, i made myself really hungry...

Shit! I totally forgot about the frozen zucchini in the freezer! Man, that would have been sooo much better--thanks for reminding me. Yeah I use soy cheeses (my fiance is lactose intolerant and I'm trying to go from vegetarian to vegan) but hell if aged cheddar isn't effing sweet.

Speaking of meaty lasagna...my fiance has this package of defrosted turkey (he's not vegan obviously) laying around the fridge :( I so could have made half the lasagna omnivore friendly...

i can't really advise tofu in a lasagna(my aunt does this. i don't reccomend it at all), but there might be some options.

shredded turkey in a lasagna(or any shredded meat) sounds rather fun, actually.

Yeah the recipe I used called for throwing it in a food processor with spinach which really wasn't that bad at all. But I think that it would have been much better as a manicotti or large shell pasta with pine nuts+tofu+spinach mixture. Plus, I cook with gas so I think I totally dried it (the tofu) out.

Yeah the turkey is the ground stuff...might be chicken. If he doesn't do something with it tonight I'll have to season it and toss it in the skillet.

Note to self: put cast iron skillets on wedding registry.
