I made a thing out of a magazine the other night that kicked ass. It was all in one pot: fresh green beans, shrimp, couscous, and artichoke hearts (I added them after cooking). Cup of salted water into the pot, green beans & shrimp until cooked, then add the couscous, remove from heat, cover, and let stand for 5 minutes.
It was supposed to be green beans, corn, shrimp, and whole wheat couscous, but I didn't feel like corn & had the boxed parmesan couscous on hand so used that (with the seasoning packet in the water up front).
You could probably improvise with broccoli or just about anything you can cook in boiling water. Not exactly a casserole, but pretty close.
I was looking for something to make to put in the freezer, so I don't think the couscous would work for that, but that would be an excellent meal to make while I make freezer meals.
I highly recommend Everyday Food magazine. Yeah, it comes from Martha, but it's surprisingly down to earth. Lots of recipes that are quick, simple, and reasonably healthy. My sister got me a subscription laste Christmas, and I was initially skeptical, but lately my cravings for Real Food overcame me and I started pulling out pages and making stuff, and HOLY COW why didn't I try this sooner??
It's got lots of things that can be prepared for 1 or 2 people, or that take well to being leftovers (that couscous thing may not freeze well, but two days in the fridge was no problem).
Tonight we had steak salad with spinach -- skirt steak brouled int eh toaster over, spinach with oil & vinegar dresisng, halved red grapes, and walnuts & bleu cheese sprinkled over everything. It took all of 15 minutes to prepare, and there was one pan, one bowl (because I tossed the spinach with the dressing), and a cutting board to clean.
Mmmm, now I'm hungrier than I was before I sat down! (Luckily, I have some cheesy muffins in the oven.) I think I just picked up a copy of that magazine, but I haven't looked at it yet. Time to go dig it out :)
I've made a broccoli bread that uses a cup of cottage cheese, but I'm pretty sure you don't wanna use corn meal either? (jiffy mix corn meal, chopped broccoli, onions, cottage cheese)
I think in the comments someone added shrimp. I think you could also add chicken easily. If you did that I don't know that it would be necessary to even have the pasta unless you wanted to.

but I don't know how well that would work as a freezer meal. I'd be afraid the veggies (and pasta) would get gushy.
