Do you think my dog would try to eat one if we adopted it? He's supposedly cat friendly (he mostly ignores any that come near him, and if they get close enough he kinda just looks at them and half wags his tail. one tried to attack him and he went behind me lol) and he's scared of our ferret.

You're probably in the clear to have a skunk. They're supposedly quite friendly, and will deal well with other animals, but you really have to raise them from little ones in order for any of this to work.
