This is the e-book app for the iPhone.

Apart from anything else it lets you download the entire Baen Books free library (plus anything you've bought on Webscriptions) and the UI is intuitive: tap the screen and you see the page turn.

Dropbox (2G of syncronised cloud storage)
Consume (for tracking both ADSL and mobile usage)
Articles (much better interface to wikipedia)

As arcadiagt5 said, Stanza is definitely worth it. If you have an Amazon account, the Kindle app is pretty cool for paid content. Facebook is a useful app if you're on there and either Echofon or Twitter for iPhone are good for tweeting.

I also use Shopping List for making shopping lists, Wikipanion for accessing Wikipedia, Flixster for checking movie times (not sure about the Australian support), google earth for fun, dicenomicon and dice roller for roleplaying, ebay, speed test, PS Mobile (for editing photos quickly), IMDB, TouchMouse for remote control of my PC and Air Sharing for storing files.

Games I've never found particularly good on the phone, but I've got a couple thatI use to burn time:
- Lightbike is Tron lightcycles
- Solitaire is an OK card gamne
- Bubbles Lab is quite addictive
- Spider is a good spider solitair games
- Sudoku does what it says on the tin
