I think that it's hard to tell who your "true self" is in the first place--maybe it's the "version" of yourself that you like best...and that may not be you when you're just relaxing, ya know? We may just like the way we act more around certain people than the way we act around others.
And also there's the factor that when we're around certain people long enough we start to pick up their habits, and that can be consciously or subconsciously--you may not notice your behavior is "assumed."
So I guess what I'm trying to say (if anything) is that who we are is constantly changing, and "assumed behavior" can become one's natural behavior. All affectations can be part of one person...it's just which of those affectations we choose to show that is interesting and changes depending on who you're with.
