So I awoke today with a serious craving for some ramen. Some SERIOUSLY good ramen. So I decided that I would go and do just that. I decided on Tonkotsu ramen ( meaning pork broth)
I got my cupcake apron and my trusty pink cooking headband and got ready to cook!
Here are the ingredients assembled to make a delicious meal. :d
For the Broth:
1 lb. pork stew meat, bone in
1 lb. chicken necks, bone in
1 medium sweet onion
1 small ginger root
1 large garlic clove (or two medium ones)
1/3 cup of soy sauce
1/3 cup of Mirin (rice vinegar cooking wine)
1 Tbsp fish sauce
1 tsp of both salt and pepper
1 gallon distilled water.
Toppings:
1 small pork tenderloin
A bunch of scallions
Shitake mushrooms
Kimchi
Eggs
Toasted seasame seeds
And finally, some instant ramen noodles.
Now, go and get a big stock pot. Place in the pork stew meat and the chicken necks.
Peel the onion and cut it into quarters. Throw it into the pot.
Peel a nub of the ginger (about the size of half your thumb) and smash with the flat side of your knife.
Do the same with the garlic, and toss them into the pot.
Now pour the soy sauce,
The Mirin,
Salt and Pepper,
And then pour 2/3 of the water over the meat.
Snuggle in the pork tenderloin.
Oh! And don't Forget the Fish sauce! (Its so smelly)
Put the burner on High and let everything boil mildly for an hour.
I passed the time by making some fresh Orange Juice. (Its so sweet!)
After the broth has been boiling for an hour, you will see scummy foam floating on the top (Ew!)
Just skim it off. Its yucky, but comes off easily.
Pour in the rest of the water, and bring it back up to a boil. Then set the burner to medium and let it simmer for another 30 minutes.
Take out the pork loin and let it rest, then begin to prepare the toppings.
Chop the scallions and mushrroms into bite sized pieces. Slice the porkloin.
Soft boil the eggs. About 3 minutes in boiling water, then remove and put in cold water. Peel and slice them in half.
After the 30 minutes is up, Strain the broth from the hard bits.
Place the sliced mushrooms in the hot broth to blanch them abit.
Save the pork bits and peel the meat from the bones. The rest can be thrown away. Chop it up, and place with the toppings.
Cook The ramen according to the package. Throw away any flavor packets. The homemade broth is much yummier.
Place about two ladle fulls of broth into a bowl. Ramen bowls are large to hold all the yummy toppings, but my evil uzimaki bowls will have to do.
Place the noodles in immediately after they are done.
DECORATE WITH TOPPINGS!~
Eat and enjoy! you will have lots of broth left over, and it freezes nicely. You'll just have to get new toppings next time. Try lots of different yummy things, like narutomaki, toasted nori, chicken instead of pork, cucumbers...whatever you'd like! :3
