Creme brûlée is the very best dessert. It has to be made with a blowtorch, not under the grill, because the custard has to be very very thick and chilled and smooth. Then there's the gentle tapping with the teaspoon tip and the shattering sugar giving way. Like treading on frozen puddles when you were a little girl. I love chewing the burnt sugar
