Disney

We may have two full days to spend at Disney next month.

I haven't been since Animal Kingdom was opened. Jon has never been.

I have no experience with Fast Passes.

What should I expect to be able to see and what should we not miss?

Well, I'm assuming you'll have access to all four parks (Magic Kingdom, EPCOT, Animal Kingdom, MGM Studios).
The MoneySnakes are, of course, the resident experts.

But Tower of Terror (MGM) is fantastic. It's a drop and bounce ride, and I *hate* those but love this ride.
Kilamanjaro Safari (Animal Kingdom) is great but go first thing in the morning or at the end of the day (animals are more active then).
The two trails at Animal Kingdom are great - birdwatching and tigers and gorillas, oh my!
Fantasmic at MGM in the evening is awesome.
Magic Kingdom: Splash Mountain.
INdiana Jones Stunt Spectacular at MGM. Muppets 3D also at MGM.

Oh, and I forgot to mention that you'll want to see Illuminations at Epcot. Make your dinner reservations around it.

If you're going to go to MGM to see Fantasmic (which you can do after AK if you have a park-hopper ticket), I'd recommend getting a Fantasmic dinner package. That way you get dinner and reserved seats at the show, rather than getting there an hour early to get seats for a 20 minute show.

Woot! Thank you so much for all of this. I spent a great deal of time today on Itercot.

Because we get some part of a day at Epcot already I'll probably choose MK for my second day. But I'll probably also spring for Park Hopper so if I miss something I can go back for it. :)
