OK, your location is terrific. Makes it a lot easier to figure out what to do with that short day on Saturday.
Go to EPCOT on Saturday. You are right next door. You can walk to the entrance to World Showcase. If you want to have a nice dinner there, make your reservation ahead of time. My faves are Japan and Italy but I also really like the Morrocan restaurant and it is typically not very busy.
The thrill rides are going to be busy but you don't care for them much anyway. So go to "Honey, I Shrunk the Audience" and Maybe "Journey into Imagination." if you want. There won't be any line to speak of. Soarin' is a fun ride (and pretty mellow) but it is a slow loader and you won't be able to get a fast pass by that time of day so you can expect a VERY long wait

The only thing I might disagree with from your suggestions is Saturday at Epcot. I'm not sure paying for the extra day is worth it - the park is only open until 9 and the earliest I could get there is 5:30 - maybe later. I need to get a copy of the itinerary of what we're doing before making that determination. I've spent more time in Epcot my last few trips, so I'm pretty familiar with the older stuff. I might get what I need out of Epcot on our "free" day there.
I may spend the evening with my coworkers at Downtown Disney instead since most of them aren't flying out until Sunday.
I really like your suggestions for Sunday at MK and Monday at AK. I think that is probably what I will do.
I promise to go on Splash Mountain - I've been before and love it. And the Crystal Palace suggestion is one I remember from your post about the place. I'll definately look into that one.
