how do you make egg salad? in as much detail as possible, please! ;-)

- hard boiled eggs (probably 2-3 per serving)
- pinch of sugar
- pickle relish to taste (approx. tablespoon per serving)
- mustard to taste (yellow is fine, i prefer Dijon. approx. 1/4 - 1/2 teaspoon per serving)
- lite mayo to taste (approx 1/2 - 1 teaspoon per serving)
- salt and pepper to taste
- pinch of paprika

mash 'em up in a bowl. for variety, you could add spices (chipotle, dill) or crunch (finely diced celery or radish).

the best part for me is a freshly made egg salad sandwich when the egg is still warm.
