Sadly, I didn't have (or buy) any eggplant. I did, however, have a single, small, purple pepper.

Huzzah for ratatouille! Weirdly enough, I made it for the first time last night. Mine turned out pretty good but needed more garlic/seasoning. Glad yours was delicious! :)

I meant remaining on thus far. If they change their minds, I might change mine, but I'm still pretty unimpressed.

That's pretty much how I make ratatouille - chop veggies, put in pot, simmer like hell.
