1) Caster is a heroic spirit. In other words, her body is a human vessel entirely comprised of magic, while inside is a human spirit akin to a ghost. But then, it's unlikely that they'll ever actually need to battle - since Fai only really seriously fights to defend Sakura and Kurogane, here.
As for sensing he's not human - that's fine! It'll be fun.
