Oooh, that's a difficult one. Hoe about: "a feeling of homeliness and togetherness, often experienced when one is in good company"?
Just hazarding a guess here.

yeah, good company seems like a requirement... but can you just be reading a book on your couch with a big blanket and qualify as gezelligheid?

I don't think so. It's not a word you would use to describe just one person. Although a room can be described as being 'gezellig', but I think that is mostly related to the feeling of homeliness.

maybe too confining, but not stuffy. it can encompass hooking up with someone, spending time with your family, finding a nice corner in a bar somewhere (and not hooking up. that's not gezellig.)...

dude. that is a part of it, but i think it's more conceptual than one word, which is why i want it on the list. it's got connotations and whatnot :)

I do not think more people have to be present. Your example: a book, a blanket, a couch (and a piece of warm dutch apple pie) qualifies as a 'gezellige avond', even without people. Although gezellig implies another person (at least), it just means a total feeling of being at ease with each other, when alone, you are being at ease with yourself.
