I always have her down as a teacher of either literature or of Colonial history. The second one is actually my favourite headcanon for her. I see her being particularly interested things like the formation of the Colonies and the development of the Articles of Colonisation and so on. It seems to fit in very well with her personality and what we see of her on the show.
I don't really see her as a teacher of any kind of science-related subject at all. Definitely something in the humanities.
I was thinking Literature, but I like the idea of her teaching history and government. Although, I see her with smaller children where she might have taught all of the subjects, depending on their education system, but I can see her enjoying those.
I'm agreeing with you because my other thought was to turn another thread to smut with the obvious answer about her extracurriculars with older students (like, up to 60ish older) and what she might have taught them. ;)
