I don't know that I see her participating in competitive sports, particularly, but I could see her as a swimmer or dancer or something like that. Maybe a bit of jogging and that kind of thing.
I could imagine her enjoying watching competitive sports like pyramid or other similar Colonial sports, particularly school competitions.
I'm so late here but my thought is that she was one of those teachers who showed up to cheer at the games her school played, especially big rivalries and playoffs. As Sec. of Ed., she especially enjoyed going to the grade school championships and, even though she could never officially take sides, rooted for Caprica and any team that had former students on it.
I also think she'd have an eye on national team sports that would somehow interact with political life just so she could speak the language. Perhaps she even knew Sam Anders' name in this way...

I'm super late to this posting, but I'll weigh in regardless.
As a huge MMA fan myself and since, as you mentioned, we know Laura was a fan of "a good fight," I'd like to think she would be a UFC fan.
She'd enjoy the mental game, the physical chess, the strategy, and the visceral competition. To naysayers of the sport, she'd point out the respect that competitors show to one another, explaining that they are often friends outside the ring and that even those who are not friends usually hug, not just shake hands, after a bout.
She relates, because she knows what it's like to verbally spar with those she has deep affection for. And she also knows what it's like to earn the respect, and come to respect in turn, enemies she's gone toe-to-toe with.
