Just to clarify - if the essential canon has a number of iterations, can I write a crossover with say 1 or all 21 of them despite the remix source story concerning only 1 of them?

Yeah, that's absolutely fine. Crossovers are only excluded when it comes to working out if people qualify to be remixed in a fandom. There's no issue with them when it comes to writing the remix.

I think this is ok, but just to check before I get overinvested in my choice--can we remix a story that has already been remixed?

You certainly can. I've done it in the past myself.

If the story we choose to remix is part of a series, are we supposed to remix just the single story or can we throw in elements from the rest of the series as well?

It's entirely up to you. You can fold in other elements of the series if you can make that work, but there's no requirement to. The single story is fine.
