Technically the cheese ain't raw, but the rest sure is, especially if you drizzle on some cold pressed olive oil.

The curd needs to be cooked to between 91 and 98 degrees, depending on who you talk to.

Though that would generally satisfy most raw food recipes, which don't use any ingredients that have been heated to over 115 degrees. And you'd have to use raw milk, not pasteurized.

Animo Juice is a non-chain place near my house. You probably won't visit very often, if at all, but it looks like you have the equipment to execute their recipes.
