Ok, so. I am not sure how to even approach copyright law and fair use. "for learning" is apparently acceptable, but what does that mean? Do I need to look up item by item the things in the book I want to do so I can check if they're under copyright (most, yes) and then try to determine if my use would be acceptable? I'm not sure about copyright law, but I'm pretty sure that if you just make one copy for personal use, and don't try to profit off it, you'll be okay. I think quoting one or two lines from the work, like you're planning to do, falls under "fair use". You might want to look up other people who've done similar projects and ask them what they did about copyright.

I've heard good things about Lulu, and my sister has made some amazing photo albums at Shutterfly...

If it is not intended for sale or profit, you are pretty much off the hook as far as copyright issues go. The safest route to go would indeed be to make a single copy and not publish the book in any other way than privately. I used Blurb to publish my senior project for school (illustrations and text) and it worked out pretty well for me.
