I've been lucky so far and haven't cut myself, but I don't do all that much knife work in pastry. I burn myself frequently. The burns on my inner arms and the chocolate under my fingernails sometimes makes me feel as though I must look like a nasty junky. Wheee!
Yeah when I was in pastry I hardly ever cut myself. Although, there was the time when the 600 pan full of proofing cracker dough fell on my face. That was the worst cut I had to endure doing pasty. The lip of the pan cut into the bridge of my nose.
