I think that you should have them exchange letters. Being shy can be difficult face to face but writing could help her overcome this.

My suggestion would be to find something you both enjoy; a topic of conversation or an activity. If you can focus on the conversation or the activity it will take some of the tension out of both of you and you can actually enjoy your time together. It will give you something to build upon.
