I bet those were delicious leek and cream cookies...
Flammkuchen perhaps, rather than Christmas cookies?

I have no idea. They called them Plätzchen, although they were more like sourdough, flame-baked pizza crust. Delicious indeed!

Would a Flammkuchen denote a larger item, say 8-10" & 2-4 servings? Trader Joe's had one called "Alsatian Tart: caramelized onion, gruyere, and ham" which was a flatbread topped with tasty bits, shelved in with the frozen pizza.

I'd say it was about 3 x 5 inches, and one serving, but yeah.
