And woah! I am excited that I am inspiring you to try sugar free experiments! I bet some fresh or soaked dates would make it killer tasty. Plus they have lots of fiber and potassium among other vitamins! And you have walnuts with omega-3! Healthy muffins! Although, if you bake the walnuts, does the fatty acid hold true? I can't find any info...
Yup yup! :D it was so incredibly easy to make, not to mention cheap, too. It'll definitely be part of my stand by recipes from now on! Thanks for the nutritional info, I love reading little snippets like that but am often too lazy to look it up myself. I didn't realise that they were good for so many things, I thought I was just getting protein haha!
The muffins were ok, but they need a little more oil as they're sticking to the liners, and also I over mixed them because I was guessing the amount of flour I needed, so by adding more, I over activated the gluten in the batter. Hrmph! Next time, though. I'm not too sure about the walnuts, but I would imagine they'd still be ok... I mean raw is almost always better for nutrition, but I don't think the value is completely ruined by baking (otherwise people eating cooked fish would be totally worthless - I wish I coul think of a better, common example rather than fish!).
Your dinner looks yummy. I had something similar in the form of these veg pots you can get in the supermarket that have lots of yummy stuff in them, there's one with a chickpea curry with lots of rice & beans & veg in it, & another one with Tuscan beans & just all sorts. They're fabulous, although I highly doubt all of the ones you can get are vegan, but they're made by the Innocent company (yes, the smoothie people).
