3/4 c Sugar
1 tb Lemon juice
1 Envelope unflavored geletin
1/4 c Water
12 oz Evaporated skimmed milk

Directions:
Combine first 3 ingredients; cover and chill 30 minutes. Place watermelon mixture in container of an electric blender or food processor. Top with cover, and process until smooth; set aside. Sprinkle gelatin over water in a small sauxepan; let stand 1 minute. Cook over medium heat, stirring until gelatine dissolves; remove from heat. Combine watermelon mixture, gelatin and milk. Pour into freezer container of a 5-quart hand-turned or electric freezer. Freeze mixture according to manufactuer's instructions.

Kiwi sherbet, you could substitute I guess. I love those small ice cream makers!

I'm leaning more towards something with geletin instead of egg whites...not sure why.
I guess eggs in sherbet just seem weird to me...like ice cream instead of sherbet.
Have you ever made sherbet? With eggs? With Geletin?
Do you think there's be a difference in how they turn out?
I just imagine the milk would make it heavier and the geletin would give it more of that light, airy, sherbet texture?

Egg whites gave me pause, too - especially the uncooked egg aspect which is not a good idea for expecting moms. It says they are optional. The recipe you found sounds good, if you don't mind gelatin.

I haven't worked much with geletin so I'm kinda excited to give it a go - but...does geletin have a distinctive flavor? Is it overbearing? Would you recommend reducing the amount to someone who has favor sensitivity issues? LOL!

The Gelatin will be better than the egg whites...its unflavored so you shouldn't notice it...its just there to give the sherbet stability and not fall apart...:) Have fun..

I will deffinately KIT - I was wondering....which is farther to drive....down here to Georgia or up north to NewJersey? I read about your healthy woes, you've always had horrendous alergies, I feel badly for you. I hope it gets better/easier on your sinuses soon. **Hugz** I'll write soon...give my best to Gin.
