We're having family to stay this weekend so I thought I'd attempt Lemon Meringues Cupcakes. It's a recipe from a book I got as a present last Christmas, in fact it's the first recipe I've ever tried from this book...
Anyway it's basically lemon meringue pie but in a cupcake instead of a pastry case. The recipe is

First I made lemon curd
Then I made some lemon cupcakes, actually much lemonier than intended as I accidentally tripled the amount of lemon juice required. I used two lemons' worth of juice instead of two tablespoons :)
Then I cut a cone out of the top, cut off the half of the cone, filled the hole with curd, replaced the top and topped it with meringue! Then I put it back in the oven for a bit. It's the chewy kind of meringue which is good as it means it doesn't crumble everywhere when you bite into it :)
