for me eating healthy is easier when i know a lot about the benefits of foods. even things that dont taste very good are easier to take when you know how good they are for you and specifically what they do.
also, habit comes into play. just dont keep bad foods around and soon your appetite will forget about them.
The technique in ACW didnt really "fix" alex, he was basically robbed of his humanity. he was systematically desensitized and then re-conditioned to hate all of the things he loved to do. you dont like to RAPE or KILL so i dont think you need anything like that
