Fishy for dinner!

We decided to go to the giant Giant Eagle (which is a grocery store in this part of the US) for lunch today; they have a food court! The plan was then to buy good fish to make for dinner today. We found nice sole fillets and M found this recipe: http://www.cooks. ( Read more... )

I'm having sauteed chicken and leeks, with brown rice. We've already had salad.

As far as I'm concerned the easiest and best way to cook small fish fillets like sole or snapper is to pan-fry them in lots of butter and a little pepper. Salmon fillets like to be baked, with butter and maybe an herb rub and/or lemon slices on top.

The trick with fish is to start with fresh, not frozen, and not overcook it.

I have one salmon recipe that I can make consistantly, that is broiled w/a mustard glaze. I haven't been brave enough to try it any other way. Your comment about fresh not frozen is spot on, as I think most frozen "fresh" fish has a gummy texture (I don't find that with pre-breaded stuff, but that's a...different kettle of fish....sorry, had to say it).

The recipe we used tonight is very much pan frying in butter, just with fresh dill and green onion.

Had a salad with spring mix, spinach, and Italian dressing. A few hours later, I picked up a microwave burrito from Speedway. I think I tasted the flour tortilla more than anything else.

Your salad sounds yummy. We're having salad tomorrow w/dinner. I've had varying results from microwave burritos; E won't touch them, but sometimes I actually like them, esp w/melted cheese!

I (sorta) had fish too.... Some tuna with a variety of noodle types (two types of shells, two types of rotini, penne, spaghetti, and gnocci), with 3 cheeses, some water chestnuts, and even some tater tots, all mixed together. This is one of my regulars (about three times a week) and so many noodle types partly cuz I love the variety and partly cuz I'm transitioning from regular to whole wheat by way of whole grain. I have to say, that I really do love almost everything I eat now - mainly cuz I only eat what I love :)!

Fish sounds yummy -- frozen fish is good if you're going to eat it raw (avoiding parasitic issues) but really - it needs to come directly from the store and into the frying pan if not from a fisherperson :)

Happy you liked the recipe and I'm looking forward to you cooking it for me in May.
