I thought someone did a study years ago and found that on big city street like in New York City or something like that, the yellow fire trucks were safer because they were much easier to see than the red ones.
I think I heard the same, its been a while now, but I know many depts did test out yellow or lime green for a least a little while from the 1970s to the 2000s.
I think they said in a more recent study that red seems to work better, as its the color that most associate with fire trucks.
Its tough to say which actually works best.
the FDNY did have some yellow trucks for a short time during the 1980s. The paint scheme wasn't well liked and seemed to actually cause more accidents for them, so, it didn't last long.

It wasn't all that long ago that all our fire trucks used to be yellow and white.
Now we only have three yellow units that I'm aware of. 1 spare engine, 1 spare truck (ladder), and 1 active ALV truck. (Air, Light, Vent)
Because of their rarity here, its kind of cool when I see a yellow unit.
