This post is mostly a note to myself, since it turned out well and I'd like to remember what I did for the filling:
3/4 cup of brown sugar
1/4 cup flour
lots of cinnamon
plenty of nutmeg
a few pinches of allspice
a number of whole cloves
a few tablespoons of Reed's Extra Ginger Brew, flat
