Still waters run deep is a good descriptor of Zanki's personality. On the surface he's quite serene and at peace with the world and everything in it. He can be cheerful, stern, or even mischievous as the situation demands, but he's rarely ever shaken from that peaceful foundation. He's a man who thinks deeply and chooses his words carefully and even in the middle of a battle is shown to think his actions through as much as possible. He doesn't mince words, however. If he thinks someone is doing something stupid he'll come out and tell them in no uncertain terms. But under the calm surface, he's a very passionate man. The people he cares for he'll sacrifice his life for without question or hesitation, and he has devoted his life to his profession to the point that he can't actually leave the life once injuries force him to retire and returns in a supporting role relatively quickly. When something does disturb his calm, usually someone he cares about being in danger or injured, he shows that passion through raising his voice and dropping everything to go to their side. Those things aside, even his anger is cool and controlled, and he hardly raises his voice unless necessary.
One of Zanki's biggest facets is that he's got a generous heart. If someone, even a stranger, is struggling with something or in danger he'll do whatever he can to help. He doesn't care for recognition or even thanks, and will happily disappear as quickly as he came without even leaving his name. This shows through in his philosophy about being an oni. He believes that oni should hunt and kill makamou (a kind of demon) out of a desire to protect nature and innocent people from them, not out of hatred, anger or a desire for vengeance.
Another is that he's a teacher. Helping people learn and grow is a joy to him, and he'll gladly offer advice on any question, even though it doesn't always go very well (he should not attempt to help people's romantic relationships, ever). His most important person is his (former) disciple Todoroki and even though Todoroki has officially graduated to become a full oni Zanki stays near as long as he can to help the man continue to grow. He can be a very 'tough love' sort of teacher, and won't shy away from punching some sense into someone if they really deserve it, but he's also patient and understanding of how to deal with people. People he's taken under his wing, such as his former disciple, are always welcome to come to him for help, and he's willing to go so far as nearly sacrificing his very soul and breaking a terrible taboo to help his disciple become an independent man and be able to move on after his death. His death, by the way, was another sacrifice to help his comrades and try to save the world and he went to it prepared and accepting that it had to happen.
There's even more to him under that, though. When he was younger he was severely wounded, physically and emotionally, by the person he trusted most at the time. She was his master and was stripped of her ability to transform into an oni for the crime of trying to kill him in order to strike a blow on a makamou. It effected him in deep and lasting ways. A part of him still feels very bitter and betrayed, but he still cares for her deeply. One reason his beliefs about oni's motives are so strong is because of her hatred towards them, and what will get him most worked up is a master's treatment of his or her disciple. Still, even when she's attempted to harm his disciple and tried to lead another's disciple astray to kill the girl and has been sentenced to death he goes to plead with her to change her ways one last time and when she does die he fulfills her last request--believing to the last that for all her faults that there had to be a shred of good in her. It's the biggest inner conflict in him, because he knows how very wrong she is and yet he can't stop caring. He's become adamant in not ever letting her situation repeat itself, to the point of point-blank telling a girl that if her motivation is revenge that she needs to quit training to be an oni.

Zanki is much stronger than a normal human, and knows a lot of spells--though he doesn't use them much even in canon--in addition to his abilities as an Oni. He can transform, generate and channel electricity, and turn music into a weapon. He can also control and direct cd-shikigami, though that's through magic imbued in them. So assuming he gets any of them back, he'd possibly be able to use them?

[The video comes on to Zanki quietly sipping gently steaming tea. He doesn't even look at the fansuwoth for a few minutes, in spite of the fact that it's obvious that he just turned it on. Finally he sets the cup down and turns a very intense and serious expression on the camera. His voice is smooth and even.]
If something looks too good to be true, it is. If anyone has any information on the creature that we formed a contract with, I need to know it, even if it seems too small to be important. If anyone knows for certain what it is, even better.
I suspect we're intended as food. [A pause.] In one way or another. Our first priority needs to be getting the--

[The second pause was more obviously a last second decision to change what he was saying. He doesn't let it trip him up at all though and fixes the camera with an almost challenging look.]
