There're different traditions. People hide and then jump out and scream at you in congratulations for surviving another year. Sugar is consumed in massive quantities so that the act of blindfolding oneself before tacking a paper tail onto a donkey's hindquarters doesn't seem ridiculous. Or, barring the donkey, you could grab a bat and whack at a brightly-colored hollow creature until candy comes out.
