Applejack is member of a huge, tight-knit family that tends to Ponyville's biggest orchard, Sweet Apple Acres, and as such, family is definitely one of the most important things in her life. She's proud of them, proud of the life she leads with them, of her upbringing and her job within them. She's used to hard work, day in and day out, and is responsible not just for harvesting the trees but also for selling the apples at market. She's proven incredibly effective at both of these, showing her willingness to be held accountable for her work, and her reliable, steadfast nature. When work needs to get done, Applejack is more than willing to get down and dirty in order to get the task done, and she will always get the task done. She tends to go for substance over style, though: she and Rarity, a more detail-oriented friend, often get into spats over how--quickly or cleanly--to accomplish things. For example, when she and Rarity have to trim some loose branches from the trees in preparation for a big storm, Applejack wants to simply tear the branches down with her lasso, while Rarity thinks that looks absolutely hideous and instead wants to tidily prune (and sculpt) the trees.
She's very close with her older brother, Big Macintosh, and the pair share a tight bond: in 'Applebuck Season', when Sweet Apple Acres is experiencing an unusually large crop of apples, it's Applejack that Big Mac' trusts to take care of the orchard while he's sick (even if he expresses concern over the size of the crop versus the relative size of his sister). Applejack is also very devoted to her little sister Apple Bloom, whose well-being is always at the forefront of Applejack's mind. When Applejack suspects that Apple Bloom could be in danger, she won't hesitate to leap in to defend her sister. That said, she's not above using her older sibling status to get Apple Bloom to behave, or do something the smaller pony might be averse to, especially when she thinks it could work out in Bloom's favor. For instance, she encourages Bloom to attend a classmate's Cutie Mark party, even though Bloom is the only one in her class without a Cutie Mark, hoping her little sister will make some friends.
Speaking of friends, friendship comes right after family on Applejack's priority list: she even says in the very first episode that it's important to the whole Apple clan! Of the main team, Applejack is probably the most down-to-earth (no pun intended, though she is an Earth Pony) of the ponies. She's very protective of her friends, without being smothering, and tries to be there for them as much as she can. She's sort of the Team Mom, in a sense: when Fluttershy is afraid to climb a mountain in 'Dragonshy', it's Applejack who immediately dismisses Rainbow Dash's teasing and grabs the map from Twilight, telling the rest of the group that she and Fluttershy will find another (longer) way around. Being dependable, her friends know they can turn to her whenever they need help: she helps Pinkie Pie bake, helps Rainbow Dash perform stunts, and even helps Fluttershy herd bunnies with her crazy lasso roundup skills.
The most important thing to note about AJ is that, despite that she can be very kind, even sweet with her friends, she is one stubborn pony. During 'Applebuck Season', when Big Mac' leaves the orchard in her care, she outright refuses her friends' help, even as she stretches herself bone-thin. She's a pony of her word, and when she promised Big Macintosh she would harvest that bumper crop all by herself, by golly, she meant it. As a gag, after a particularly frustrating talk with Applejack, Twilight has a conversation with a kindly and easygoing...mule. Also, each of the six ponies embody a specific virtue, and Applejack's is honesty. She will never tell a lie; she may cover up the truth a bit to spare a friend's ego, but when things are serious, Applejack is always there to set things straight, no matter what. She's dependable to a fault, and it's one of the things people appreciate the most about her.
Strengths/Weaknesses:
+ Hard worker: as stated, AJ has no qualms about getting down and dirty when there's work to be done.
+ Honest: she's a straight talker
+ Good with animals: Applejack's no Fluttershy, of course, but works with dogs and cows routinely at home, so she's pretty familiar with how wild things work.
+ Brave: Applejack doesn't let things get her down. She's not as arrogantconfident as Rainbow Dash, but she's got guts.
- Stubborn: Applejack is incredibly, tremendously, stupendously stubborn. She's as stubborn as a mule. Two mules. Ten mules.
- Misses the trees for the forest: AJ suffers from a serious lack of attention to detail. 'Yanking trees down without checking where they're going to land' kind of lack. Yeah.
- Pony: well, there's no two ways about it, AJ is going to have to adapt to hands and feet. This should be...interesting.

[ Applejack holds up a large, plump Leppa berry to the screen: she is glaring suspiciously at it. ]
I hear tell this is supposed be a 'Leppa' berry. [ So much contempt. ] Sure looks like somethin' wantin' to be an apple to me. An' trust me: I know apples.
But this-- [ Shaking the berry at the screen. ] --this doesn't even look like a proper apple! And it's growin' from a bush! How're ya s'posed to harvest 'em if they're on a bush?
[ Without even so much as a pause, she takes a bite out of the berry. She swallows it, with the biggest frown ever on her face. ]
Now that just ain't right! It doesn't even taste like an apple.
Is supposed to taste good to you...hue-muns? 'Cause I ain't got anything but wax and sawdust, here.
[ APPLEJACK DISAPPROVES OF THIS BERRY, JOHTO. JSYK. Feed turns off. ]
Third Person Sample:
Well, that had been a bad idea.
A terrible idea, in fact.
Applejack groaned, clutching her stomach. Moments after eating the Leppa berry, she'd been struck by horrific hives all over her stomach and abdomen; not long after, her stomach had proceeded to summarily reject all of its contents. Fluttershy, already on edge because of their new human shape, had been of little aid; she'd tucked AJ into bed and was currently preparing a pot of vegetable soup over their campfire. Applejack felt both guilty and embarrassed; guilty because she was holding them back, and embarrassed because most of the network had seen the stupendous Leppa fiasco.
She'd have to put on a brave face, she knew--they had a long road ahead of them tomorrow, sick or not. Applejack's stomach protested the thought, but besides a sharp pang of pain, there was no dry retching like earlier. That was a good sign, right? Fluttershy opened her mouth to speak, but Applejack cut her off:
"Now, I know what yer gonna say, sugarcube, and the fact o' the matter is that there ain't no keepin' me down, sick or not. We'll be back on the road tomorrow, just you watch, and we'll make it to Violet, lickety split!"
And then she let her head fall back with a groan of sheer misery.
"I was going to say," Fluttershy mumbled, hiding behind the curtain of her hair, "that the soup's ready."
"Oh," was all Applejack could muster, as she buried her face deeper in the blankets.
Terrible, horrible, worst idea ever.
