I’ve had mexican wedding cookies in the past, but was never really a huge fan.  The dry crumbly texture wasn’t very appealing to me, so I’d usually pass on them when I encountered them on cookie plates and dessert buffets.  These chocolate peanut butter snowballs are something ( Read more... )

Would it be possible to roll out the dough first to make thin layers that you wrap around the centers? Like dumplings or wontons.

Possibly - I think the dough would have to be wetter. The original recipe has you slice pieces off a dough log and flatten them out with your fingers first, but one of the issues I kept having was that the dough just sort of crumbled instead of molding around the center nicely. I think next year we might try a cookie with these insides, but a different dough.
