D'oh...yeah, if you don't have (b), then (a) is even more of a problem - the other methods all involve carefully tending a pot of heated milk to make sure it doesn't burn or boil over.
I actually thought of Little Tales when I was writing this up, and Gen's comment on the ability for engineer-types to be able to be able to happily eat the same thing every day. While I can do yogurt/granola/fruit for lunch daily and not burn out, I think genet would be sick of it within a week ;)
I'm told organic milk is pasteurized at a higher temperature, so it might overall be preferable if you're worrying about bacterial contamination. (It also keeps longer, for that reason.)
