And spare me all the "I didn't know vegetables had balls" jokes. :)
So, I worked without a recipe, really.
Just steamed a few broccoli flowers, carrots and sweet potatoes for about 12 minutes.
My precious steamer.
chop chop.
threw in some chopped onions, salt, peppers and two eggs.
mixed them up in a big bowl and threw in about 3/4 cup of bread crumbs.
Rolled them into cute looking balls.. which later had a short dipping in whole wheat flower.
2 minutes each side on a frying pan (with almost no oil, otherwise what's the point in eating veggies!)
and voila.
They were surprisingly yummy!
