Where do you live? I found y rice paper in an Asian store, they're really not common here either.
I'm pretty sure you won't get the same affect by using other types of wraps- but using *no* wrap could work. just wrap in lettuce, like in the picture above from the Korean restaurant in Berlin.
if you try with other wraps and it comes out nice let me know though!

I used:
- steak leftovers, cut into thin strips.
- omelet (spiced it with some soy sauce and shoyu but a regular one will do just fine)
- fresh lettuce
- rice noodles

the sauce I prepared using- store bought fish sauce, lemon juice, spicy chili and garlic.

basically for the filling you can use anything- chicken, beef, vegetables, rice, potatoes, noodles, eggs, etc. sweet potatoes is one of my favorite fillings, personally.

dip the rice paper in water before placing some filling inside, wrap it up, dip in the sauce and eat. too easy to make :)

good luck and let me know how it went!
