Cooking for a Crew...

traveling_storm asked a few questions about what it takes to feed a shipful of people. I love my job. It's a captive audience who usually appreciate my efforts. I have my "days" where things don't go well. This is the start of my 4th season. I haz questions!

What is a red seal?

How do you decide portions? I assume now it's a case of experience and knowing your audience, but in the beginning you're told what, 'meal for 20' - how do you prepare for that? What of you don't make enough? Or do you keep cooking until everyone is gone?

Are sailors 'snacky' people? Do they try to raid your kitchen? Do you beat them with a spatula?

I still find this endlessly fascinating. :)
