I think we had this conversation once, but my vote is for a breakfast casserole over just scrambled eggs. There are lots of easy scrambled egg/biscuit/whatever casseroles out there, and I think plain scrambled eggs always seem to turn out wonky if you're making them for more than 2 people. I think you'd also be fine if you choose to omit the eggs entirely - really depends on how many of the in-laws are coming.

Just three, so there'll be five adults total. I was thinking about doing a frittata, but I couldn't find any recipes I liked.

Here's a recipe my mom sometimes makes for family brunches that works well. It's pretty basic, so there's a lot of play in the exact ingredients and seasonings.

1 lb ground sausage
1 can refrigerated crescent rolls (aside: I have HOW many frickin years of education and I still need spell-check to tell me how to spell refrigerated?)
2 c. shredded cheese
4 eggs
3/4 c. milk
salt, pepper, etc to taste

Line 9x13 pan with crescent rolls, mushing them together to form a crust. Cover with (browned) sausage and cheese (Mom uses mozzarella). Mix eggs, milk, and seasonings, then pour over dish. Bake at 425 for 15 min or until set. Let stand 5 min.
