recipes? anyone?

Alright, I need recipes. My mom is making me cook once a week to get me in to the practice fo cooking for myself in teh fall. The problem is, I have no recipes and the ones I do have aren't very healthy. My mom won't eat something that has cream of soup in it, of any kind, or anything with heavy cream or anything that is fattening. Do any of you ( Read more... )

My favorite thing to make is a stir-fry. You don't need a recipe at all, you just need to learn the technique. There are lots of different ways to season it, so you can just experiment and figure out what you like. Some things will taste better than others, but it will almost certainly be edible. And it can be quite healthy - you can fry enough for two people with just a tablespoon or so of olive oil, which is "good" fat, anyway. Ideally, you need a good wok - it should be about a foot in diameter and several inches deep, and with a rounded interior, not flat like a frying pan. It's important because the secret to a stir fry is to get the wok very, very hot in the center but nowhere else. It's much better if you have a gas stove; electric stoves just don't get that hot ( ... )

What about Fajitas? Take either chicken or beef, some raw veggies, I use onion and peppers, either red or green, and some chilis. Cut everything up, put a lille oil in the pan, let it get nice and hot, and fry everything. I usually fry the veggies first, and put them aside, the do the meat, then mix everything together and warm it up. Get some tortillas and put the fajitas on them. Then viola! Put salsa cheese, tomatos, etc, in it and you're set!
