Eggplant parmigiana

So last night I made one of the best foods I have ever created. I started with fresh eggplant. Peeled it and sliced it thin. I then made a batter of garlic, Romano cheese and egg. I let the eggplant dry for a bit while I lined the bottom of lasagna pan with marinara sauce then mixed in fresh ricotta cheese. So the layer was like a mix of the two. I ( Read more... )
