Most of my favorite ways involve something that will kill you, though, like curry powder... I will keep mulling it over.

Maybe you can do mexican-without-the-pepper, like cilantro, lime, cumin if you like it, garlic, onions, and salt as desired, and then some combo of tomatoes, beans, and corn.
Ginger-lemon-cumin-cilanto-coriander, with plain yogurt, tomatoes, greens could give it a little Thai kick, but probably you've never had Thai food in your pepper-deprived life and haven't acquired the taste, ha ha.
Maybe pretend quinoa is polenta and use heavily tomatoed sauces or other traditional Italian combos? Honestly I sometimes use it to thicken a chili or tomato sauce.
You can also add it to something like a chicken soup, which I think you mentioned liking in a previous post?
Btw, have you noticed how cheaply you can get quinoa on Amazon if you buy it in bulk? You're probably already going to CostCo or some place equally cheap, but just thought I'd throw that out there.
