 Two things that I'm doing in my year off:

1.  Find the best dark chocolate, ever
2.  Make the best bowl of pho, ever

On my quest for chocolate: 
I've always had a soft spot for Ritter.  I find some dark chocolate a bit too bitter, with a sour aftertaste, and lacking in richness.  Green and Black's, for example.  I remember there used to be a chocolate ( Read more... )

I love Godiva myself. I'm a big fan of Belgian chocolate in general. I can't get into Swiss chocolate like Lindt and (I think) Ghiradelli. Everyone always raves about Cadbury, but I don't like it. Have you ever tried Leonidas chocolate? Everyone raves about it, but I haven't had the opportunity to try it yet.

Ah, my mom makes a great pho too. It's not as hard to find bones here in the South. But I don't think I'll ever be able to make it myself because of the bones (yuck) and the smell of anise really bothers me for some reason. Agreed - a low sodium diet is absolute nonsense. ;) Your pho sounds like it will be delicious!

I love the smell of anise myself, and fennel, and licorice. You should get the recipe for pho off your mom. Because one of these days, you might change your mind about making a pot...and then you'll have to rifle through cookbooks like me!

Well here's another vote for Belgian chocolate, especially Leonidas. I had it once when a friend gave me a box as a gift. AMAZING chocolate.

I can't wait for you to post your perfected pho recipe. For carcasses, I keep chicken bones in a bag in the freezer and make stock whenever I've gathered enough bones.
