That looks delicious! You're vegan now, right? That must be a challenge, glad that you are cooking! I could probably handle being a vegetarian if it weren't for my parents, they'll never stop eating meat, and since I'm cooking for them too, there's no point in trying to be vegetarian.
Actually, it's pretty easy to make balanced vegan food and serve it with a side of meat--that's what I do when I cater for parties. Meat eaters rarely notice how awesome the veges are in these circumstances, but no mind.
Also, like any skill, vegan cooking starts off a bit hard because its new and the learning curve is steep. But, it only takes about a month of dedication to build a set of really easy and delicious dishes to return to. It's all about changing one's cooking habits, rather than any difficult knife skills or methods.
