This is very, very interesting, and in fact, I work with a professor who teaches a class called "The Exploration of Light and Color" and as such, he is an expert in such things. So I asked him. He says that he thinks things would still have their color, because things get their color when light is either reflected or absorbed by them. Hence, when time froze these objects would probably be frozen in the act of either reflecting or absorbing said light.
Although when asked his opinion on which Scenario would happen WERE one to happen, he said it would be A because theoretically you could freeze time BEFORE light hit the objects, when the light would become visible and gain a color.
hm. i learned about something barely even related to this but i thought i'd share it because i found it interesting. my nasa scientist astronomy professor last semester described to us the effects of an object entering a black hole, and how everything slowssss down the closer and closer you get to it, so the wavelengths of light have the same effect, they get all stretched out as they approach the hole. so if theoretically we could watch something (or someone which is how i had pictured it because its more amusing) getting sucked into one, you would watch the thing go from its normal color all the way down the spectrum, like to violet, blue, green bla bla all the way to red. so yeah, its not related, but i thought it would enlighten you a little. and now maybe you can picture the people you hate getting sucked into a black hole and becoming a beautiful spectrum of color. not me ofcourse
