Why would Eames have two watches?
SIMPLE!
One (or both!) is his real totem!
It's a bit difficult to see in this picture, but from down in the actual dream, Eames is wearing a different wristwatch (silver-ish instead of gold-ish).
Also, why would anyone, especially a known thief/forger/con man let anyone know what his totem is?
Sure, Arthur tells Ariadne that his totem is his die (pair of dice?), but how easy would it be to have several totems?
(Maybe it's Arthur's semiautomatic with custom engravings.)
I refuse to believe that Eames is stupid enough to let Cobb know what his totem is, that he doesn't constantly have a totem on him, and that the poker chip he picked up from his table in Mombasa was his (only) totem.

The idea for multiple totems came from a friend and from
this fic.
And someone else pointed out on another forum that Eames'(possible) totem is himself. (Arthur: As if he doesn't have a big enough ego already.) Because as a forger, Eames cannot do his dream job in reality. So, no need for a totem. Just--try and forge. If'n you can, you're dreaming. If'n you cannae, you're not.
But a totem is also useful for knowing if you're in your own head or on someone else's.
I guess if Eames comes to in a dream dressed in naught but some well-tailored trousers, though, that would be a tip-off...
