Yum! There's nothing like those first new greens from the garden. That first salad is a treasure and a celebration of the return of spring.

We're right behind you, and fortunately our winter kale is going to go to seed exactly when the spring greens are ready to take over.

Care to share your recipe for orange honey balsamic vinaigrette? Sounds delicious.

It's all about proportions and individual taste. The greens, especially arugala, were a bit peppery and slightly bitter so I sweetened up the dressing with OJ juice as well as adding some orange pieces to the salad to balance it out.

juice of 1/2 orange
4 Tbsp balsamic vinegar
2 Tbsp extra virgin olive oil
1 tsp of water

whisk together.

The reduction was simply the pan drippings with a couple tbsps of the vinegarette simmered and than drizzled over the chicken.
