It's all about proportions and individual taste. The greens, especially arugala, were a bit peppery and slightly bitter so I sweetened up the dressing with OJ juice as well as adding some orange pieces to the salad to balance it out.
juice of 1/2 orange 4 Tbsp balsamic vinegar 2 Tbsp extra virgin olive oil 1 tsp of water
whisk together.
The reduction was simply the pan drippings with a couple tbsps of the vinegarette simmered and than drizzled over the chicken.
