And then I had that cake (doot-DOOt-DOOt-doot) Now Iiiiiii'm a believer.....
It's week three or four now and I haven't had what the literature and you are describing, but when I screw up (the cake wasn't even good, dammit, but that peanutbutter frosting....) I get a crazy upset stomach like nobody's business and I'll spare the grue but you're right - it has become obvious when I've eaten something I shouldn't.
I hope you see some scale difference soon! Last week at the doctor I was down six pounds (but I truly believe it's the Synthroid dose uppage in play, too). I have goal items as a reward system and at 5 pounds I said I'd get myself the DVD of Battlestar Galactica (the first episodes on tv when the Cylons blow up the planet). If only could find it lol I'm gonna Amazon it soon....
