Is there anywhere is Escondido or in close proximity (maybe San Marcos, but not say, Carlsbad) where I can get decent Japanese food/sushi?  I don't like to go just anywhere for that kind of stuff, so any recommendations would be appreciated.

If you're willing to go down to Solano Beach, you should try Station Sushi. Everything is always fresh, and they make their rolls pretty big.

It's a bit further south than Escondido, but we like Yummy Sushi in Carmel Mountain Ranch.

The restaurant is called Akita's. It's located on the corner of Escondido and Felicita. It's the best Japanese food ever. I've been going there since I was a little girl, and they serve awesome boats, great tempura, and excellent sushi and sashimi.

Akai Hana (was Shien of Osaka)

In Rancho Bernardo there is the restaurant formerly known as Shien of Osaka, currently known as Akai Hana. They have a lot of the Japanese food/sushi you would expect, plus others that aren't common.
