I've got the first 32 mini muffins in the oven baking and 10 more waiting to go in, as well as a small baking pan with the rest of the batter for our breakfast. I'll probably send all of the muffins to David's class for snacktime and hope it's enough. *sigh*

Doubled the recipe. Used applesauce instead of milk and didn't measure the apple bits.
