So they come here and pack up the house in a day. Then the next day they load everything up. Then 2-5 days after that, my stuff arrives at the new place.

Um, where do I and the kids live in the meantime?

Anyone done this before? Help...

With kids, no idea.

Without kids, you pack several days' clothing and personal-care items, an air mattress with linens, other things you'll need while waiting, and anything you don't want to trust to the movers into your car, drive to the new place, and camp, eating out until your stuff arrives. (Or you pack minimal-impact food, e.g. stuff you can eat cold or make with hot water, etc.) This assumes you'll have utilities at the new place when you arrive. Or you sleep on a friend's couch, preferably near the destination.

But yeah, that's a pretty wide window; can't they narrow it down for you?

Road trip with motels, and trick your kids into thinking it's really awesome.
