YAY!

This reminds me that we I need to talk to you about wedding "cake." Do you make doughnuts (or something like it)? & Do you have the capacity to make about 300? (Is that an insulting question for an obviously skilled pastry chef?)

No not insulting at all. I can make just about anything you wish. I just need sufficient time and prep.

*grins* Just look at my Icon. I so don't take myself to seriously.

As a matter of fact a traditional French wedding Croque en bouche,
"It is a high cone of profiteroles (choux filled with pastry cream) bound with caramel, and usually decorated with threads of caramel, sugared almonds, chocolate, flowers, or ribbons." (so says wiki)

But in this case Wiki is right.

While the choux is not deep fried like a doughnut, it is similar in that it is a filled pastry.

Woah, that looks like a bunch of doughnut holes glued together with syrup! *awesome*

We're not exactly sure what we want, but the doughnut is clearly superior to cake (at least for us). We don't even have an exact date for the wedding yet, because the damn club-owners are disorganized, and can't get back to me with any regularity. But! We're looking at October.

If you've got some time to brainstorm ideas with me, and then shoot me an estimate, that would be fantastic!
